Sundried Tomato Dip

Makes – 300mls
Serves – 2-4 people
Ingredients
- 1/2 cup sun-dried tomatoes
- 1/4 cup oil from the sun-dried tomatoes or olive oil
- 1/2 cup roasted cashews
- 2 Tbsp filtered water
- Small squeeze lime juice
- Sprinkle garlic powder
- 1 tsp Italian herbs
- Dash of rock salt
- 1 Tbsp nutritional yeast
Method
- Place ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable Speed 4.
- Turn machine on and run for 20-30 seconds using the tamper to press the ingredients into the blades (you want the dip to be blended but still slightly chunky, not pureed)
