Vitamix Vanilla Bean & Pistachio Ice-Cream Recipe …it sounds too good to be true but believe me this recipe will leave your guests wanting more and it is such a breeze to make! Pistachio Nuts are packed with good healthy fats, protein, vitamins and minerals that help keep our heart healthy, our weight management in tack, reducing the risk of hypertension while improving our digestion … so I’m thinkin’ if Pistachio’s are so darn good for us, then I should probably include them into one of my dessert recipes, right?
Can I get a whoop whoop and a heeeeeeeck yes!?
With my taste buds desires the hubby and I got together in the kitchen, whipped out the Vitamix and blended up together some good old fashioned magic. I’ll give credit where credit is due … my hubby knows a things or two about desserts so together we created the perfect flavour.
Vanilla Bean & Pistachio Ice-Cream
Makes: 0.5 – 1L
Serves: 2
Equipment
Ingredients
- 1/2 banana
- 1/4 cup pistachios (shelled and husks removed)
- 6 x Medjool dates (pitted)
- 1 vanilla bean scraped or 1 x tsp vanilla essence
- 1-2 Tbsp raw honey
- 3-4 cups of ice
Method
- Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
- Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend for 30-45 seconds or until desired consistency is reached.
- Stop the machine and serve.
Caramel Sauce – Optional
Ingredients
- Warm Caramel Sauce
- 10-12 medjool dates
- 3/4 cup water
- pinch of pink rock salt
- 1 vanilla bean scraped
Method
- Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
- Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend until smooth creamy consistency
- Drizzle on the inside of your ice-cream cone or your ice-cream bowl, fill with ice-cream and then garnish with roughly chopped pistachio’s to add a little texture!
Is this recipe supposed to have milk or cream in it ?
Hi Josie, no the nuts act as a cream to thicken it up. We have just slightly tweaked the recipe ingredients to be even tastier. Happy Blending!
