I love a good treat and this Vegan Wagon Wheels Recipe is perfect! Who remembers Wagon Wheels? I do! I wasn’t the biggest fan but then again… anything with chocolate on it is a winning treat in my eyes!
This is a great recipe if you are wanting to put a healthy spin on the classic. These were an absolute hit in the office so I will definitely be making these again soon.
The chia jam is also a fantastic staple in the kitchen! Have it on toast or on some freshly made scones. I would probably re-make this recipe using strawberries instead of raspberries as the raspberry seeds can be quite crunchy and not as nice to eat.
Ameka used some Chia Raspberry Jam in her Breakfast Pudding and the image below is proof that is looks amazing and I can certainly say that is tasted amazing…
You can also use Maple Syrup in this recipe if you are not a fan of Rice Malt Syrup. I like using RMS due to it not having any fructose. The less sugar the better!
Vegan Wagon Wheels Recipe

Serves: 10 – 12 people
RASPBERRY CHIA JAM – INGREDIENTS
- 1 cup raspberries
- 2 tbsp chia seeds
- 1 tbsp rice malt syrup
MARSHMALLOW – INGREDIENTS
- 1/2 cup soaked cashews
- 1/2 cup dried coconut
- 1/2 tsp vanilla paste
- 1/3 cup almond milk
- 3 tbsp coconut oil
- 2 tbsp rice malt syrup
BISCUIT – INGREDIENTS
- 1/2 cup buckwheat
- 1/4 cup almond meal
- 1/2 cup oats
- 10-12 medjool dates
RAW CHOCOLATE – INGREDIENTS
- 1/2 cup coconut oil melted
- 1/2 cup cacao
- 1/4 cup maple syrup
RASPBERRY CHIA JAM – METHOD
- Combine all ingredients in a bowl with a fork. If you are using frozen raspberries make sure you let them defrost for about 30 minutes before hand.
- Set aside in the fridge.
MARSHMALLOW – METHOD
- Add all ingredients to your Vitamix blender Wet container and secure the lid.
- Start on variable speed 1 then quickly turn up to HIGH speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until smooth.
- Transfer to a bowl and let it thicken in the fridge.
BISCUIT – METHOD
- Add all ingredients to your Vitamix blender Wet container and secure the lid.
- Start on variable speed 1 then quickly turn up to HIGH speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until you have a mold-able dough.
- Roll the mixture between two sheets of baking paper and cut out circle shapes and set in the freezer for about 20 minutes.
RAW CHOCOLATE – METHOD
- Add all ingredients to your Vitamix blender Wet container and secure the lid.
- Start on variable speed 1 then quickly turn up to HIGH speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until smooth and transfer to a large bowl.
ASSEMBLY
- Add your marshmallow mixture to a piping bag and pipe onto one side of the biscuit only leaving a well in the centre.
- Add the chia jam to the centre.
- Add the other side of the biscuit and sandwhich together gently.
- Dip in chocolate and once you have done this too all of them set them in the freezer for about half an hour.
