Hearing these words from someone so young really restores my faith in the younger generation. I’m not going to lie, when Tommy and the demonstration staff came back from the Mind, Body & Spirit show and told me her story I was getting teary! Such a sweet heart.

“My family and I are very healthy, so in June we went to the Sydney Mind Body Spirit festival. That was the first time I saw the Vitamix, and that was when I fell in love with it!! I don’t get any pocket money and my father said that I need to work for it in order to realise the value of it, so I had to find different ways to pay for it.”

Good move Dad! Teaching the young ones that hard work is rewarding and such a valuable trait to build upon.

How did Kirsten save the money for her Vitamix?

“I was looking for ways to save some money, so I refunded my school buss pass, got $100 and started walking to school.”

Extra cash, free exercise outside and getting to hang out with nature! Sounds good to me! What a great start!

“Then, I won $60 in a drama competition for a play that I have been practicing this year with my drama class.”

Watch out world! We have an future star in the making.

“I still needed $640 so I started looking for a job. My friends are getting jobs at KFC and McDonalds, but I wanted to follow my passion for health and drama. With the help of my father, we found a job in Go Vita, a great health food shop in Lane Cove. Also I have signed up to do extra work in movies and TV commercials. As both of these jobs don’t start until January next year I loaned the money off my father and will pay him back after I start working.”

How is Kirsten going with her new Vitamix?

“l am LOVING my new Vitamix!!!! It is SOOOO amazing!!! We have made so many delicious things with it for breakfast, lunch and dinner!!

I try to be a very healthy person and this has been a huge step in my life in that direction. Not a day has gone past when I haven’t used it!! It is the first large purchase that I have ever made and I think it will be by far the best for a very long time!!!

It has made nutritious healthy food taste more delicious and has opened up a new world of healthy recipes!!

Another thing I love about the Vitamix is that it allows me use my imagination and create my own recipes!!”

If the exclamation marks are anything to go by we can safely say that Kirsten is loving her new Vitamix! She certainly has been getting creative… this healthy chocolate mousse recipe looks amazing!

Makes: 750mls
Serves: 2-4 people

Ingredients:

  • 2 cups kidney beans (canned or you can cook them yourself)
  • 1/2 cup cocoa powder (you could also use carob or cacao)
  • 1 ripe banana (peeled)
  • 1/4 cup honey (preferably raw)
  • 1 1/4 cups coconut cream
  • 4 cubes ice
  • Shredded coconut (to garnish)
  • Fresh Strawberries (to garnish)

Method:

  1. Put the ingredients in the order listed above (except for the coconut and strawberries) into your Vitamix 2L wet container and secure the lid.
  2. Turn your machine onto variable speed 1, then move up to speed 10 and immediately override to HIGH speed. Blend until you have reached your desired consistency.
  3. Serve with strawberries and sprinkled with shredded coconut.

We’ll definitely be running to the kitchen to try this one 🙂 You can sub the strawberries for whatever fruit suits you, garnish with some chopped nuts, sub out the honey for some RICE MALT SYRUP… the options are endless. Make it your own!
