My own journey to health and living foods began with a serious health scare with cervical cancer in my early 20’s. I knew something had to change and that I both wanted and needed to create a new lifestyle for myself.

I went to Thailand and booked myself into a fasting retreat and embarked on a 7 day vegetable juice fast with colonics twice a day and herbal supplements to help shift old waste and clear stored toxins out of my cells. So much shifted for me, not just physically but also emotionally and I realized just how much toxic waste we really hold onto, and how releasing this can usher in a whole new way of being.

When I finished the fast I continued on an exclusively raw vegan diet for the next eight months. I was positively beaming with life force energy! My moods swings and PMT vanished, my thinking was clear, I had boundless energy and a greater sense of joy, calmness and lightness of being.

This new life path inspired me to share my knowledge and experience with the world and from here, Naked Treaties was born. From the very beginning, Naked Treaties was a beautiful way to share the vibration of love and joy through food.

The Raw Bar in Byron Bay has certainly become a destination point, a place that is continuously abuzz with colour, smiles and people from all walks of life. Here we focus on superfood smoothies, slow pressed juices, alkalizing iced coffees, a diverse and eclectic range of raw breakfasts and daily lunch specials, as well as our signature desserts. We also offer seasonal juice cleanses and raw food workshops that have been embraced by our local community and beyond.

Having developed a large and engaged community right across Australia through the distribution of our raw cakes, treats and chocolates, Naked Treaties has really come to represent a vibrant, radiant lifestyle that is not only health conscious, but also fun, creative and adventurous! People also come here with an open mind to try new things. Visitors to the region are inspired by the local people, the relaxed atmosphere, the healthy vibe and carefree attitude of living a natural life. I think they are more inclined to try new things, to give green smoothies or raw cake a try!

Since the rapid expansion of Naked Treaties, my personal mission has also become clear; that is to light up the world by being a conduit of love that inspires transformation and contributes to the health and happiness of others. Over the past year my beloved partner Chris Mapstone and I have begun a deeply profound project called Sacred Sonics. These offerings are a fusion of traditional cacao ceremonial rituals and sound healing; uniting music, meditation, dance and ceremony to open the heart and offer a powerful, blissful and transformative journey. It is a very powerful co-creative experience that is wonderful for manifesting what you would love to see more of in your life and in the world.

My world can often be a busy and buzzing space of activity and projects! Having a diet rich in organic living foods helps to provide me with the energy I need to keep me clear, grounded and focused. Our savory menu underwent a huge overhaul this summer and I love enjoying the new creations which include Mexican Nachos, Curry Coconut Spring Rolls, Italian Pizza and even a raw BLAT!!! (Coconut bacon, lettuce, avocado, tomato and more on our raw onion bread!) Raw food is so much fun and so delicious!

The recipe below is a cake that we made for a workshop at the Raw Bar over the summertime. It’s one of my favorites- light and creamy with a real zing and easy enough for anyone to make themselves at home.

Matcha cake

Ingredients

FOR THE BASE

  • 1½ packed cups pitted Medjool dates soaked
  • 3 cups desiccated coconut
  • 1 teaspoon Celtic or Himalayan crystal salt

Method

FOR THE BASE

  1. Whiz all ingredients together until dates are completely broken up and the mixture is dough-like.
  2. Press evenly into a 22cm spring form tin and set aside

Ingredients

 FOR THE CAKE

  • 1 cup melted coconut oil
  • Juice of 2 limes (keep skin for decoration)
  • ½ cup coconut nectar/agave or honey
  • 3 large avocados
  • 1cup coconut meat
  • 1 heaped tablespoon of Lucuma (optional)
  • 1 heaped teaspoon Matcha Green Tea (powdered)
  • 1 teaspoon salt
  • ¼ cup of coconut water or almond milk (add a little more if mix is too thick to blend).

Method

FOR THE CAKE

  1. Combine all the above ingredients in a high speed blender until very smooth.
  2. Refrigerate for at least 4 hours to set or place in the freezer if you are short on time.
  3. Serve chilled with macadamia shavings or crushed pistachios, zested lime curls, goji berries, edible flowers and fresh mint
