Rainbow Mousse

This recipe I will admit was two things: Super easy and super tasty! I wanted to try and make a mousse with a difference. One that didn’t contain nuts for all those with allergens or just watching the calories and I wanted to try and not use Avocado for all those people who don’t like Avocado. Which I think is blasphemy… If I was a fruit I would marry an Avocado.

But enough about me being weird… here is a Mousse Recipe with a difference! Silken Tofu anyone??

What are the benefits of Silken Tofu?

Silken tofu is definitely a favourite ingredient among vegans and vegetarians for obvious reasons but what are some benefits of this silky smooth substance?

Tofu is made from soybean curds and is naturally gluten-free, low in calories, contains no cholesterol and is an excellent source of protein, iron and calcium. Tofu is a complete source of dietary protein which provides all the essential amino acids needed in the diet thanks to soy being the prime component of tofu. Soybeans are high in healthy polyunsaturated fats, especially omega-3 alpha-linolenic acid. Soy has also been linked to decreasing the risks of osteoporosis and also helps to lessen PMS symptoms, regulate blood sugar and prevent migraine headaches.

ALL IN MODERATION THOUGH!

Just because a soy has certain benefits certainly doesn’t mean that you should be having soy for every meal of the day, 7 days a week.

Equipment

Ingredients – White Mousse Layer

  • ½ block organic silken tofu
  • 1 Tbsp non-dairy milk (I used rice)
  • 1 Tbsp rice malt syrup or two dates
  • 1 tsp psyllium husk
  • Vanilla extract
  • Pinch Himalayan sea salt

Ingredients – Purple Mousse Layer

  • ½ block organic silken tofu
  • 1 Tbsp non-dairy milk (I used rice)
  • 1 Tbsp rice malt syrup or two dates
  • 1 tsp psyllium husk
  • Vanilla extract
  • 1 heaped Tbsp Maqui Powder
  • Pinch Himalayan sea salt

Method

  1. Put all the White Mousse Layer ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 30-45 seconds or until desired consistency is reached.
  5. Stop the machine, divide the white mousse evenly and spoon into two different serving jars. Place in the fridge to set whilst you make the second layer.
  6. Put all the Purple Mousse Layer ingredients into the Vitamix 2L container in the order listed and secure the lid.
  7. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  8. Use the tamper to effectively press the ingredients into the blades whilst processing.
  9. Blend for 30-45 seconds or until desired consistency is reached.
  10. Stop the machine, divide the purple mousse evenly and spoon into your two different serving jars on top of the white mousse layer. Place in the fridge to set for about an hour.
  11. Garnish with whatever colourful creations you like and enjoy!

The weather may be dreary here at the moment in Queensland however, that is no excuse to not enjoy bright and colourful foods!
