Vegan Peppermint Slice Recipe! Yep you heard me. It’s delicious and a healthier alternative for when you are wanting to try something a little more nourishing and not full of empty calories. I don’t know about you but I absolutely love chocolate and peppermint together.
This Vegan Peppermint Slice Recipe is fantastic to whip up (well it does take some time) … for your next special occasion. If you have an issue with nut allergies you could sub it out for something more suitable. Like shredded coconut instead of macadamias and you could use sunflower seeds and pepita seeds for the base.

Vegan Peppermint Slice Recipe

Makes: 1 Loaf tin, 22cm (L) x 11.5 (W) x 6cm (D)
Serves: 6-10
Ingredients – Base
- 1 cup macadamia nut meal (or any nut meal you want)
- 4 Tbsp Rice Malt Syrup
- 1 cup shredded coconut
- 1/2 cup virgin coconut oil
- 4Tbsp chia seeds
- 2 Tbsp raw cacao powder
- 1 tsp vanilla paste
- ½ teaspoon salt
Ingredients – Mint Cream
- 1 1/2 avocados, medium size
- 1/4 cup rice malt syrup
- 1/3 cup coconut oil
- 1 1/2 cups shredded coconut
- 1 tsp peppermint extract
- Pinch of salt
Ingredients – Chocolate Spread
- Raw Blend CACAO IN THE RAW recipe, minus the nuts and shredded coconut. Make enough to pour over the top.
Method – Biscuit Base
- Put all the base ingredients into the Vitamix 2L container in the order listed and secure the lid.
- Turn your variable speed dial to 10 and pulse the machine on and off 5 times for 2 seconds each time.
- Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend until you have a rough dough.
- Press your base into the lined loaf tin and freeze whilst making your mint cream.
Method – Mint Cream
- Put all the base ingredients into the Vitamix 2L container in the order listed and secure the lid.
- Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend until you have a smooth cream.
- Pour over your base and then set in the freezer whilst you make your chocolate layer.
Method – Chocolate Layer
- Mix the coconut oil, coconut syrup, cacao powder until smooth you can blend it in your Vitamix if it’s easier.
- Once you have reached the desired consistency, pour it over your prepared Mint Cream and set in the fridge over night or for a few hours.
- Slice up to serve!
